So are characters like Gambit, Blade, or Iron Fist available? I really wanna do an iron fist movie

Blade - yes (Disney has no announced plans for the character since re-acquiring him). Iron Fist - maybe (really depends on the pitch). Gambit - not right now (Disney is still evaluating whether or not to proceed with the Channing Tatum-led film).

Is She-Hulk up for grabs? And for what it's worth, I'd be willing to tie her in with the rest of our little Marvel universe (especially the Fantastic 4, if that is still going forward).

She-Hulk would be up for grabs, and yes, there is still a Fantastic Four film in development.

I have recently heard Kevin Feige and Marvel TV are fighting for Blade, with Feige wanting to do Blade with Wesley Snipes.
